Nginx reverse proxy enforce non gzipped content encoding

Ok so I'm currently developing a new framework for a legacy service we have (and don't have control over). I'm using nginx to reverse proxy my requests and modify the source to fetch some data. Now the issue I'm getting is that the legacy service server keep sending me gzipped content, not allowing me to modify the source of the response.

I've got this in my nginx configuration files:

proxy_set_header Accept "";
proxy_set_header Accept-Encoding "";
proxy_pass ########;

However, when I try to access the site, here are the response headers I see:

Content-Encoding: gzip
Vary: Accept-Encoding,User-Agent,#######

I'm not sure what I'm doing wrong.. I've done this(the exact same conf) for countless other services, but I'm stuck with this one..
