Authentication flow for a native phone app

When I open up the the Youtube, Facebook, Instagram, or Twitter apps on my phone and I'm asked to login - what actually happens?
- Is OAuth used at that point? Or only after authenticating with the username/password/MFA?
- Which OAuth flow is used?
- I never see a permissions box since these apps are built by their respective companies, so how do they do that with OAuth?
